i researched the best kitchen knife sets as i have been trying to cook more at home and realized my old knives are super dull and frustrating to use. i have been experiencing a lot of issues with uneven cuts and honestly it makes cooking less enjoyable. i went through reviews from trusted sources like the Spruce Eats Food and Wine and Techgearlab and after comparing many options these two kept coming up as the top choices:

Victorinox Swiss Classic Knife Block Kitchen Knife Set

Wusthof Classic Ikon 7 Piece Slim Knife Set with Acacia Block

however i am having trouble deciding which one would be better for me and i would love to get your expert advice and hoping maybe some chefs or people who cook a lot at home on this forum can also share their advice.

i usually cook a mix of meats vegetables and bread so i am wondering which one would hold up better long term and stay sharp without too much maintenance. recommended for me? any suggestions or advice would be appreciated.

thanks in advance

Do you ever have any gun and knife shows near you? That's where you can pick up some unique one of a kind blades, often offered in Damascus, and you get to pick them up, see if the handle fits your hand, and feel the balance and compare side by side. Generally the steel will hold an edge much better than mass produced blades. They may cost a bit but they will be heirlooms for several generations if they are cared for correctly with a light coat of oil in between uses

I have a block full of Chicago Cutlery that I bought back in the 80s which continues to serve me very well. I have no idea if the quality of today's production is up to the level of what I have but my knives rarely need sharpening beyond a lick with the steel from time to time.
I think it's very important to always use a quality cutting board to protect your knives. I use a thick Hickory butcher block board which will outlast me.

I find a German knife called an F Dick holds a good edge or Victorinox a Swiss knife
or out here in New Zealand a brand called Victory make real good knives.
