Favorite workday breakfast for energy and focus

I've noticed that after a few sluggish mornings breakfast really plays a huge role in how focused I feel throughout the day. I'm curious to know what everyone else eats to keep their energy up and their minds sharp during a hectic workday.
 
I figured this out pretty quickly when I started cutting. If I skip breakfast I find myself slow and scattered by mid-morning. A good meal like eggs and toast or even some leftovers from the night before keeps me focused and sharp all day.
 
On those long chainsaw days if I have a weak breakfast, it really takes a toll on me. I tend to grab oatmeal with some fruit or a breakfast sandwich. Nothing too elaborate, just something solid to keep me going so I don’t burn out later on.
 
After a few tough mornings out there, I made it a rule not to skip breakfast anymore. Now, I make sure to load up on protein like eggs, yogurt, and sometimes a banana. It really helps me stay awake and makes sure I don’t feel worn out before lunch.
 
I used to have strong coffee and sugar like nutty bars and oatmeal cream cookies. After 15 years I got tired of it and id be starving by 10 am anyway. Made a huge change in diet by making a breakfast casserole consisting of layered biscuits, sausage, eggs, sausage gravy, cheese and hash browns. I make 2 pans that have about 6lbs of ingredients each that last me 2.5 weeks. Being a different kind of energy it carries me to noon and well past sometimes.

That has all my favorite food groups! How do you make it?
Those are large metal casserole dishes. 15 biscuits line the bottom. 2lbs of sausage precooked on top of them. 18 eggs next and I mix the salt and pepper in beating the eggs. Then 3 cans of sausage gravy, normal soup can size. 2lbs of shredded cheese and topped with 2lbs frozen hash browns. Preheat oven to 375. 45 minutes top shelf oven and 15 minutes broil. Pretty good with some salsa too. And that way you hit all 5 food groups. 🤣🤣
 
Thanks for sharing the recipe. It sounds super hearty, and the fact that it’s all in one dish makes it even better. I’m definitely going to give it a try.

Is this total for both pans? I don't like to eat on an empty stomach so this should last me a couple days!
 
Nah, thats each pan. Obviously, pans or dishes vary in size. Cover the bottom with biscuits, however many it takes. The rest of the amounts are up to you.
Quick question about the biscuits, do you have a preferred type, or just whatever's on hand?
